Yep, you heard that (read that?) right. I am finally, FINALLY, tackling a meat course. Two, if you count the Foie Gras as a 'meat' as opposed to a 'starter.' Quite frankly, I think it is remarkable that I avoided meat dishes for nearly half of the book.*
Here goes on the menu:
(1) Corsu Vecchiu with Spiced Carrot Salad
(2) Foie Gras with Apples and Black Truffle
(3)Double Cut Lamb Chops with Cassoulet of Summer Beans and Rosemary
(4) Verjus Sorbet with Poached Peaches
* As of right now, i've done 40 recipes (including a couple of unblogged ones coming at a future date). Almost halfway there!
